Thinly Sliced Raw Plantain Bajjis

We slice farm-fresh raw green plantains lengthwise, dip them in a spiced gram flour batter seasoned with hing (asafoetida), ajwain (omam), and red chilli powder, and fry them until they puff up like crispy golden pillows.
