The Science of Crispy Golden Ghee Roast Dosai: Traditional Stone Grinding & Slow Fermentation
A perfectly executed South Indian Ghee Roast (Ney Roast) is an architectural wonder—paper-thin, gossamer-crisp, deep golden amber, yet possessing a slight fermented softness on the inside, glistening with aromatic clarified butter.
The Fermentation Secret
Great dosai is never made from instant packet flours. At Hotel SBR, our batter is ground daily using traditional wet stones. We balance short-grain parboiled rice with whole de-husked urad dal (black gram) and a measured pinch of fenugreek (methi) seeds. The fenugreek not only aids gut digestion but caramelizes on the hot iron tawa, giving the dosai its signature golden brown hue.
Why We Use Pure Desi Cow Ghee
Unlike commercial restaurants that blend vegetable oil with butter essence, we pour generous ladlefuls of 100% pure desi cow ghee. When the ghee touches the seasoned cast iron flat tawa, it creates an intense nutty aroma that travels all the way to the Sulur main road.
The Accompaniments
A Ghee Roast at Hotel SBR is accompanied by our famous trio of chutneys: creamy Coconut Chutney with mustard-curry leaf tadka, tangy Tomato-Onion Kara Chutney, and refreshing Coriander-Mint Chutney, paired with our hot, small-onion drumstick sambar.
