The Legendary Kumbakonam Degree Filter Coffee: History, Brewing Method & The Secret Chicory Ratio
In Tamil culture, coffee is not just a morning caffeine booster; it is a spiritual morning ritual. At Hotel SBR in Sulur, the day starts before dawn with the aromatic sizzle of freshly roasted plantation peaberry coffee beans being brewed in heavy traditional brass filters.
What Does 'Degree' Really Mean?
There are multiple folk legends regarding the term 'Degree'. The most authentic historical origin traces back to the lactometer used in Kumbakonam dairy farms. Milk that tested pure on the thermometer-like lactometer was referred to as 'Degree Paal' (certified unadulterated cow milk). Others believe it refers to the first decoction extracted from the brass drip filter—the highest degree of concentrated aroma.
The Golden 80:20 Ratio
At Hotel SBR, our signature blend uses 80% prime Chikmagalur plantation peaberry and arabica beans, finely ground with 20% high-grade French chicory. This imparts the signature chocolate-brown viscosity and lingering caramel finish without overpowering the delicate floral notes of the coffee.
'A great cup of filter coffee must have three things: thick piping-hot cow milk, dense first-degree decoction, and the frothy crown created by meter-high pouring between the dabarah and tumbler.'
Served in Traditional Brass Dabarah
We serve our coffee strictly in traditional brass dabarah-tumbler sets. The brass retains heat while aerating the brew as you pour it back and forth to create that velvety cream foam. Stop by our Sulur counter or order a hot parcel to experience authentic South Indian nostalgia!
